Singkamas

singkamasWhenever I ride buses plowing the route running the span of Zambales, I usually keep an eye out for the succulent natural snack that is singkamas.

Singkamas is a white tuberous root with yellowish-brown skin when not yet peeled. Also known as jícama and Mexican Turnip, singkamas originates from Mexico, but due to its growing popularity, cultivation of jícama has spread from Mexico to Central America, China, and Southeast Asia.

Here in the Philippines, singkamas can sometimes be found at the palengke or wet market and occasionally by the roadside being sold by vendors, especially in Zambales. Singkamas has a sweet flavor, so it tastes great on its own, but Filipinos sometimes enjoy it with salt and/or vinegar.

singkamasSingkamas is composed of 86-90% water. Its high water content hydrates you and will likely leave you full after just a couple of tubers; thus making it an ideal travel snack. Singkamas is high in carbohydrates in the form of dietary fiber and contains only trace amounts of protein and lipids. Its sweet flavor comes from the oligofructose inulin (also called fructo-oligosaccharide) which is a prebiotic.
